Super quick and simple to make!

Now with minimal baking ingredients to make yourself… delicious healthy Peanut Butter Banana Oatmeal Cookies.

Check out my latest ultimate revise version of my famous peanut butter oatmeal cookie. I’ve totally eliminated the normal baking questionable ingredients.

Absolutely NO SUGAR! (…except if you count the sugar from the banana itself. )

Just a side note: The 2 banana will add a sweetness to this cookie batch. And because of this, the cookie must be baked baked immediately after it is mixed to prevent the browning of the fresh banana. The psyllium husk is used as a binder to hold all the ingredients together. The grounded psyllium seed husks bind moisture and help make the cookie less crumbly. They are also used as a regular dietary supplement to improve and maintain regular gastrointestinal tract (GI) transit.

Be sure to leave me your comments and suggestion below to let me know how your cookies turn out.   :-)

PEANUT BUTTER BANANA OATMEAL COOKIES

Ingredients:

  • 2 cups 100% Whole Grain Oatmeal
  • 1 cup Natural Fresh Peanut (please chop up the nuts in the blender)
  • 1 tablespoon of Ground Cinnamon
  • ½ tsp Celtic Sea Salt
  • 2 tablespoon Psyllium Husk
  • 2 tablespoon of Pure Coconut Oils
  • 2 fresh Banana
  • 1/4 cup of Water
  • ½ cup Raisins*

* ingredient optional

Step 1: In a large bowl mix whole grain oatmeal, freshly chopped peanut, ground cinnamon, and physllum husk together with a fork until all ingredients is evenly distributed. (before adding any liquids). Then add the coconut oils, banana, and 1/4 cup water. Mix them all thoroughly by hand with a new clean plastic bag over your hand. (I usually just put a clean large GLAD clear plastic bag over my hand). Now add any optional ingredients you want such as raisons, cranberry, almonds, etc (but no more than ½ cup total.  And mix them all together.

Step 2: Grease the baking pan sparingly with some pure coconut oils.

Step 3: Scoop 2 spoon of the uncooked peanut oatmeal cookie dough mixed. Round and flat it to the cookie size you want. Place it onto the greased baking pan. Do this until all the cookie mix is used up.

Step 4: Place rack in upper third of oven and preheat to 350 degree F.

Step 5: Bake for 15-20 minutes or until golden brown. Cookies will be soft. Wait till they are cool a bit (10 minutes) before transferring and eating it.

Happy healthy eating!
